No fresh fruit needed for these quick gluten-free smoothies - made simply using frozen fruit, milk, ice cream and honey plus cocoa or coffee if you like.

Smoothies. Milkshakes. Whatever you like to call them, I love to drink them in the summer. Sometimes on a lazy Sunday afternoon, sitting down in the garden supping a smoothie is just perfect. However recently I have become a breakfast smoothie convert. Some people like to add oats and seeds to their smoothies for that extra health boost, instead I like to serve with my Healthy Granola Bars - sometimes I even dunk them in!

This recipe started when I found I was throwing out overripe bananas or feeling the urge to make yet another banana cake/bread/muffin as they needed using up (a good excuse but not so good for the waistline!). I started to freeze sliced bananas and use them in milkshakes. If you don't have frozen fruit, that is fine - just use fresh and some ice cubes for the chill factor. I use bananas in every flavour milkshake as I find they give them a good consistency.

Gluten-Free Smoothies

Smoothies four ways - coffee, strawberry, banana, chocolate


Make 2 large glasses or 4 small glasses

For your smoothie base you will need:

  • 1 chopped frozen banana
  • 2 scoops vanilla ice cream
  • c.500 ml/½ pint milk
  • 2 tbsp honey

For different flavours you will need:

  • handful of strawberries, blueberries or other fruit if desired
  • instant coffee or cold shot of coffee
  • 1 tbsp cocoa powder


  • Simply put the banana, ice cream, other fruit if using, honey, coffee or cocoa powder and milk in your liquidiser. You can adjust the amount of milk depending on how thick you like your smoothies.
  • Blend until well mixed and frothy.
  • Pour into your glasses and serve.
  • Drink immediately.

This smoothie mix will keep for an hour or so, but you might need to whizz it up again in your liquidiser to making it frothy again.

I like to freeze washed and halved strawberries that are on the turn, ready for my almost instant smoothies.

You can buy frozen berry mixes which work well in these or I have even been know to use strawberry jam if I didn't have anything else!
