Roasted Pepper and Tomato Soup

This tasty gluten-free soup is a quick and easy soup to make. You simply roast the vegetables, then liquidise with vegetable stock. You can even freeze the soup in batches for another day.


I really do enjoy soup. Recently I have got into the habit of roasting the vegetables for my soups. I find it gives a real depth of flavour and also reduces the need for stirring whilst the soup is cooking. I used to make a roasted red pepper soup but had bought a big bag of mixed peppers and decided to use yellow peppers too. It worked really well so I think you can use any yellow, orange or red peppers in this soup.

Gluten-Free Roasted Pepper and Tomato Soup

Ingredients

Serves 4/makes c.1½ litres of soup

  • c.320g/3-4 yellow, orange or red peppers (I usually use 2 red peppers and 1-2 of another colour), deseeded and cut into 3cm chunks
  • c.400g/6 tomatoes, cut into quarters
  • 1 red onion, peeled and chopped into c.2cm chunks
  • 2 cloves garlic, peeled and cut into small pieces
  • 1 small sprig rosemary
  • salt and freshly ground black pepper
  • olive oil

Method

  • Preheat the oven to 200°C/180°C fan/400°F/gas mark 6.
  • Remove the leaves from the rosemary sprig and chop into ½cm pieces.
  • Add the peppers, tomatoes, onion, garlic and rosemary to the roasting tin.
  • Season with salt and pepper.
  • Drizzle with olive oil.
  • Toss to make sure the vegetables are well coated with oil and seasoning.
  • Roast in the oven for 30 minutes, stirring a couple of times.
  • Remove from the oven and allow to cool slightly.
  • Put the roasted vegetables in a liquidiser with the vegetable stock.
  • If using immediately, heat up gently in a saucepan and serve.
  • If not using straightaway, store in the refrigerator for a couple of days or freeze.

You can use this method for any roasted summer vegetable soup. If you like tomato soup, then you'd really like a roasted tomato soup, made with lots of tomatoes, onion, garlic and basil. Delicious.
