Pesto Fish

Pesto fish is a really easy, tasty standby recipe for a gluten-free meal. Keep the ingredients in the freezer and you can have it on the table in less than 30 minutes, with only a few minutes prep time.


Simply spread frozen fish (or fresh if you have it and adjust cooking times accordingly) with your own homemade Pesto or a shop bought variety. Cook in the oven and serve. I like to roast with vegetables so I have a meal all in one tin!

Gluten-Free Pesto Fish

Sundried tomato pesto cod and roasted vegetables

Ingredients

Serves 2

  • 2 fillets of fish (salmon, haddock and cod all work well)
  • 2 tbsp pesto (any flavour)

 Additional if required:

  • 1 red onion, chopped into large chunks
  • 1 red or yellow pepper, chopped into 3cm square chunks
  • 1 courgette, chopped into 2cm chunks
  • 2 tsp Special Secret Spice Mix or any other seasoning your require
  • â…“ butternut squash, peeled and chopped into 1cm pieces
  • 1 tbsp olive oil

Method

  • Preheat the oven to 200°C/180°C fan/400°F/gas mark 6.
  • Place all the vegetables, if using, at the bottom of a baking tin.
  • Toss in 1 tbsp olive oil and seasoning.
  • Place the fish on top and spread with pesto.
  • If using, place 1 sundried tomato on top of each piece of fish
  • Bake in the oven for 20-25 minutes if the fish is frozen.
  • If your fish is fresh, cook the vegetables first for 10 minutes, then add your fish according to the cooking time required.
  • Serve with rice and green vegetables.

Every few months I buy a big batch of vegetables for my oven roasted vegetable dishes and have a chopping session. I chop up red onion, peppers, mushrooms and courgettes, and sometimes sweet potato or squash (cut these into smaller chunks as they will take longer to cook) and spread evenly onto baking sheets. I freeze overnight and then bag up into meal sized portions. When making this dish I simply place the frozen vegetables on the baking tray, drizzle with olive oil, seasoning and stir. Then place the fish on top and cook for 20-25 minutes in a hot oven. I usually serve with some steamed broccoli or other green veg.

If you don't like fish then you can easily just use vegetables. Simply roast vegetables with pesto and serve with rice. Delicious!
