Gluten-Free Pancakes

Gluten-free pancakes served the traditional way with lemon and sugar

Makes around 4 small pancakes (for 2 people):

  • 70g gluten-free plain flour
  • 1 egg
  • 175ml milk
  • pinch of salt

  • Put the flour and salt in a bowl.
  • Mix in the egg using a balloon whisk.
  • Add a little of the milk and mix.
  • Then beat in the rest of the milk to make a smooth batter.
  • Allow to rest for 10 minutes or so.
  • Heat a non-stick frying pan (I use a smallish one) until hot and add a little cooking oil.
  • Spoon in a little batter and swirl around until the base of the pan is covered.
  • Cook for 1-2 minutes. You will find that when the underside is cooked the pancake will move when you shake the frying pan.
  • If you are feeling brave toss the pancake or if not, turn with a spatula.
  • Cook on the other side for 1-2 minutes.
  • Put on a warm plate and repeat for the other pancakes.
  • Serve as desired with jam, chocolate spread or the traditional lemon and sugar.
