Oven Baked Risotto

A delicious and versatile gluten-free risotto that you can cook in the oven. No need to add stock a ladle at a time...


Traditional risotto will have you adding hot stock a ladle at a time. Now while I love this version, it does mean you are tied to the stove somewhat...I've adapted this from a Delia recipe I saw her make years ago. She added eggs at the end of hers to give that soft risotto feel. I opt for crème fraîche.

Gluten-Free Oven Baked Risotto

Risotto with courgettes, asparagus and roasted peppers, finished with freshly grated parmesan.

Ingredients

Serves 3-4 with a salad

  • 1 onion, finely chopped
  • 1 clove garlic, finely chopped
  • Whatever vegetables/meat you fancy, chopped
  • 1 mug risotto rice (c.200ml)
  • 3 mugs chicken/vegetable stock (c.600ml)
  • dried herbs, salt and pepper
  • 2 tbsp crème fraîche
  • good grating of parmesan

Method

  • Preheat oven to 180°C/160°C fan/350°F/gas mark 4.
  • Fry onion and garlic in a little oil in a deep frying for around 5 minutes until softened.
  • Add whatever meat/veg you are using. If you are using uncooked meat, cook for around 5 minutes, if not move straight onto the next step.
  • Add the rice and allow it to coat in the oil. (Rinse rice first if packet instructs you to).
  • Add the chicken stock, stir and bring to the boil.
  • Transfer to an ovenproof dish.
  • Cook for 25 mins.
  • Stir and cook for another 10 mins.
  • Remove from the oven.
  • Stir in the crème fraîche, parmesan, seasoning to taste and serve.

This versatile base recipe really can be used for so many different meat and vegetable ideas.  Here are just a few:

  • bacon and pea (add the peas in the last five minutes) (mixed herbs)
  • chicken, courgette and red peppers (basil)
  • pork and mushrooms (thyme)
  • butternut squash (preroasted) and Boursin

I like to use Marigold Swiss Vegetable Bouillon and Kallo Organic chicken stock cubes in this. Unless I am cooking for vegetarians I usually use a mixture of both.

Serve your risotto with a crunchy salad and bread and you will have a very filing and satisfying meal.
