Magic Chocolate Pudding

A light and chocolatey gluten-free sponge, with a layer of chocolate fudge sauce.

This has got to be one of the easiest puddings ever. You are around 25 minutes from chocolate heaven. You can prep the pudding a little while in advance and then simply finish the sauce, pour over and pop in the oven while you are eating your main course. It is also a good store cupboard standby as it doesn't require any chocolate, just good quality cocoa. Although you pour a thin runny sauce onto of the pudding before it goes in the oven, it magically transforms into a sponge with a gooey fudgy chocolate sauce underneath whilst cooking.

Gluten-Free Magic Chocolate Pudding

  • 100g gluten-free self raising flour
  • 50g caster sugar
  • 2 tbsp cocoa
  • 50g chopped walnuts (optional)
  • 140ml milk
  • 50g butter, melted
  • vanilla essence

For the sauce:

  • 125g soft brown sugar
  • 2 tbsp cocoa powder
  • 175ml boiling water


  • Preheat the oven to 180°C/160°C fan/350°F/gas mark 4
  • Sieve the flour and cocoa into a bowl.
  • Add the sugar and walnuts (if using) and stir.
  • Next add the milk, melted butter (cooled slightly) and a few drops of vanilla essence.
  • Stir well to form a thick batter.
  • Spoon into a greased pudding basin (c.1½ pt) or four deep individual moulds/ramekins.
  • In a bowl mix together the brown sugar, cocoa and boiling water.
  • Pour this over the batter.
  • Bake in the oven for 35-40 minutes for a pudding basin or 20 minutes for individual ramekins.
  • Once cooked, carefully tip onto a serving dish/plates.

Light or dark soft brown sugar will work for the sauce. Darker sugar will give you a more intense flavour.

This pudding is lovely served with vanilla ice cream or cream.
