Golden Fairy Cakes

Everybody loves fairy cakes, so these easy to make gluten-free golden fairy cakes will go down a storm. Decorate as you choose or even better get the kids to do it!

The recipe for these cakes came about purely by chance. I usually use my Chocolate Fairy Cakes recipe but had run out of rice flour and then discovered I had run out of caster sugar too. I decided to make the cakes with self-raising flour and brown sugar. They were delicious and the addition of the fudge bar on the top really worked. The recipe will work with caster sugar too. You will just have a more standard sponge cake flavour. Enjoy!

Gluten-Free Golden Fairy Cakes

Golden fairy cakes decorated with buttercream and butterfly sprinkles


Makes 12 small cakes

For the fairy cakes:

  • 115g margarine or butter, softened
  • 115g soft brown sugar
  • 2 eggs
  • 115g gluten free self-raising flour
  • ½ tsp baking powder
  • 1 tbsp milk

For the buttercream:

  • 50g butter
  • 100g icing sugar
  • ½ tsp vanilla essence

To decorate:

  • any sprinkles of your choosing
  • chopped up Cadbury's Fudge bar


  • Preheat the oven to 180°C/160°C fan/350°F/gas mark 4.
  • Mix together the butter and sugar until light and fluffy.
  • Beat the eggs.
  • Add all the rest of the ingredients to the bowl and mix well.
  • Put papercases into a 12-hole bun tin.
  • Spoon the mixture into the cases, dividing evenly.
  • Bake in the oven for 15 minutes.
  • Cool on a wire rack.
  • To make the buttercream, mix all the ingredients together until well mixed and fluffy.
  • You can decorate the cakes how you like. I usually pipe the buttercream and use sprinkles or finely chop up 1-2 fudge bars and sprinkle.

Having discovered that Cadbury's Fudge bars are gluten-free I decided I would try them on top of these cakes. They work really well with the slightly fudgy taste of the cakes.
