Bircher Muesli

When you are fed up with porridge and fancy a chilled, fruity start to your day bircher muesli is just the thing. This versatile dish needs no cooking. Simply soak gluten-free oats overnight with a mixture of fruit juice and milk, then serve the next day with your choice of fresh fruit and yogurt and add extra sweetness in the form of honey if required.

A Swiss doctor, Bircher, created this muesli over 100 years ago. There are lots of variations. You can also add dried fruit to your soaking mixture and add nuts the next day.

Gluten-Free Bircher Muesli

Serves 2

  • 80g gluten-free porridge oats
  • 100ml apple juice (or your favourite juice)
  • 100ml milk
  • 1 grated apple or pear (optional)

To serve:

  • yogurt (I use natural but you can use fruit yogurt)
  • your choice of fresh fruit
  • honey


  • Simply put all the ingredients in a bowl, stir well, cover and put in the fridge overnight.
  • Serve the next day with fresh fruit. Stir in yogurt if you like your bircher muesli thick. If you need any extra sweetness add a drizzle of honey.
